Ingredients to make Fresh Tomato Salsa

4 ripe Vine Tomatoes
1/4 large Onion
1 heaped teaspoon Tomato Puree
1 level teaspoon Sugar
1 tablespoon Olive Oil
1 clove Garlic
1 teaspoon Coriander (leaves)
1 tablespoon Lime Juice
1 teaspoon Italian Seasoning (Oregano, Basil, Dried Red Pepper, Marjoram, Thyme, Rosemary, Sage, Parsley)
1 level teaspoon English Mustard
Good pinch of Salt and Black Pepper

Directions to make Fresh Tomato Salsa

Step 1:

Place the Tomatoes in a bowl and pour boiling hot water over them, let them sit for a couple of minutes. This makes the skin really soft and easy to peel from the Tomato flesh. Prepare the tomatoes by carefully cutting around the green stalk base and removing it. Now pull the loose skin, it will peel without much effort. Chop the Onion and grate the Garlic clove into a bowl, add the peeled Tomatoes.

Step 2:

This recipe doesn\’t require a food processor, but you could use one on a low setting. The idea is not to make the Salsa into a paste, but keep some rustic chunks of tomato to make the texture more interesting.

Step 3:

Now add the rest of the ingredients and mix well.

Ingredients to make Mango, Corn and Black Bean Salsa Recipe:

  • juice of two limes
  • 1 teaspoon of cumin
  • 1 teaspoon of hot sauce
  • ½ of a mango, peeled and finely chopped
  • 1 -11oz. can of whole kernel sweet corn, drained
  • 1-15 oz. can of black beans, rinsed and drained
  • 1 medium tomato, cored, seeded and finely diced
  • 1 small jalapeno pepper, seeded and chopped
  • 1 small green bell pepper, cored, seeded and chopped
  • ½ of a small red onion, finely chopped
  • freshly ground sea salt to taste
  • freshly ground pepper to taste
  • Thin lime slices and sprigs of fresh mint for garnish.

Directions to make Mango, Corn and Black Bean Salsa Recipe:

  1. Whisk together the lime juice, cumin and hot sauce in a bowl, and set aside.
  2. Mix all remaining ingredients (except for the salt and pepper) together in another bowl.
  3. Pour the juice mixture over the other ingredients and gently mix with a spoon.
  4. Add salt and pepper to taste.
  5. Chill for at least one hour.
  6. Garnish with sprigs of fresh mint and lime slices.

1/4 c Green onions; thinly sliced
16 oz Sour cream, fat-free
1 1/2 c Salsa; chunky, hot
Fresh cilantro or parsley
Corn tortilla chips

Directions to make Salsa Bean Dip

Step 1:Drain the liquid from the beans and discard. Place the beans in a food processor and process until almost smooth. Add the hot sauce and lime juice. Mix well.
Step 2:Spread the bean mixture over the bottom of a large platter. Spoon and spread the sweetened chili sauce over the beans, then sprinkle the green onions evenly over the top. Cover the beans mixture and scallions with the sour cream and top it with the salsa.
Step 3:Garnish this with sprigs of fresh cilantro and serve with tortilla chips.
